Olive Oil
Where is your olive oil produced?
100% of our olive oil is produced within the Lasithi Region in Crete. Zakros, the village we call home is in the far east of this region. All the farming families we work with grow and mill their olives within the region.
What variety is your olive oil?
Our olive oil is produced from Koroneiki variety. This is a well known Greek cultivar. We do not blend or mix. 100% Koroneiki.
Is your olive oil organic?
All the farmers we work with are assigned to and audited by a third party organic board. Some of those farmers are 'in-conversion'. This process takes three years , through out it you must adhere to the organic rules and you are audited. Typically farming families have to wait four years before seeing any financial benefit for their conversion. That's a barrier to change. We pay full organic prices and above market from year 1 of conversion, a way to give security and financial benefit for working with nature.
What about Polyphenols?
Polyphenols! Those wonderful compounds responsible for the amazing health benefits of extra virgin olive oil. Our olive oil sits between 350 - 500 mg/kg mark at the time of bottling . For context, if you have 250mg/kg you can legally make health claims within the EU. Our average polyphenols are much higher than that. A distinctive and high polyphenol olive oil would be considered 450 - 500 mg/kg. The Koroneiki Olive is known for its high polyphenol count. We pick earlier leading to higher counts.
While we think Polyphenols are important , we focus on flavour, not just optimising for polyphenol count. Inspired by the mediterranean diet, the best way for health benefits of olive oil is finding a well produced, delicious olive oil and using it generously throughout your diet, just like the grandma’s here.
